Terroir: Brown, stony soils rich in calcium and magnesium with good aeration and drainage; limestone outcrops on higher slopes
Winemaking: Harvested mechanically at night to preserve aromatics, the Verdejo undergoes a 4- hour cold maceration at 6 °C before gentle pressing. Fermentation takes place in temperature-controlled stainless-steel tanks, with no oak maturation. The wine is bottled young to maintain its fresh, fruity Verdejo profile.
Tasting Notes: Pale yellow with green reflections; powerful nose of fresh white fruits and citrus, with green apple, lemon and hints of peach and hay; on the palate, refreshing, balanced and slightly sweet in texture, very fruity and round with character and a delicate fennel finish.
Food Pairing: Pairs beautifully with fresh fish and shellfish (grilled seabass, prawns, mussels), creamy seafood or vegetable pasta, paella or other Mediterranean rice dishes, semi-soft cheeses.
