Winemaking:Hand-harvested in October, this wine undergoes maceration, gentle pressing, controlled fermentation, and aging on fine lees before bottling after 10 months.

Tasting Notes:Intense golden color with expressive aromas of vanilla, white peach, and citrus fruits. Freshness accentuates slight candied fruit notes, creating a full-bodied gastronomic experience.

Food Pairing:Smoked fish, Lobster, Shrimp, Hake, Sea bream, Fishes in sauce, Escargots, Prawns, Sauerkraut, Veal rib à la crème, Fondue, Bleu des Causses cheese, Goat cheese.

Medium to full-bodied, sappy and satiny, it has a fleshy core of fruit with bright acids and delicate bitterness, concluding with a long, mineral finish.
