"La Salamandre" is a Loire Sauvignon Blanc from Thierry Delaunay's Signature range, inspired by the salamander, a symbolic figure found throughout Touraine and on many chateau facades in the region. Thierry Delaunay, owner of Domaine Joël Delaunay in Pouillé, belongs to the fifth generation of a family rooted in Touraine viticulture, and has developed this Signature collection to highlight the freshness, precision, and accessible elegance of Loire Sauvignon Blanc.

Winemaking: Made from a selection of the best Sauvignon Blanc cuvées from Touraine by Thierry Delaunay, blended and aged on fine lees to capture the complexity, elegance, and finesse of the appellation. The vinification includes pneumatic pressing, alcoholic fermentation at 16°C, and aging on fine lees with stirring in stainless steel tanks. The sheet also indicates a yield of 60 hl/ha.
Tasting Notes: “Lilac, bosc pear and meadow grass aromas open on the nose and tread across dusty forest floor adding intrigue. The palate begins with tart acidity that immediately mellows and washes across wet river stone that is accented with honeysuckle.” – From Wine Enthusiast
